I should mention that I had a choice to not use the backup but instead treat it like a new iPad. Long story short, I followed the guide of the computers Mac and iPad. I waited until every app was loaded back onto the iPad. However, when all apps completed loading, I got brave and clicked on the email icon. With just slightly longer than normal, email opened. Now incoming email looks normal.
